Spicy Lamb and Feta Meatballs

These meatballs are a versatile choice and a simple one, too. Serve with salad for a quick lunch that’s low in carbohydrate, or with couscous or rice.

Recipe Ingredients:

14 oz (400 g) minced lamb
1.75 oz (50 g) fresh white breadcrumbs
1 egg, beaten
1 tsp ground cumin
1 tsp paprika
1 handful mint leaves, finely chopped
Salt and freshly ground black pepper
2 oz (60 g) crumbled feta cheese
2 tbsp sunflower oil
Couscous, to serve

Recipe Methods:

1  Mix together the minced lamb, breadcrumbs, egg, spices and mint, and season well. Gently mix in the feta cheese. Cover and chill for 30 minutes.
2  With damp hands, shape walnut-sized balls with the lamb mixture.
3  Heat the oil in a large frying pan and fry the meatballs over a medium heat for 5-7 minutes, until browned all over and cooked through. Serve with couscous.
