Using yoghurt gives this crowd-pleasing dessert a healthy twist.
It is also particularly quick if you use ready-made meringue.

|7 fl oz (200 ml) whipping cream|
|10 fl oz (300 ml) 2% fat Greek yoghurt|
|1 tsp vanilla extract|
|5.5 oz (150 g) ready-made meringues|
|10 oz (300 g) strawberries, chopped quite small|
|5.5 oz (150 g) raspberries|
Step 1: Whisk the cream until it is very stiff, then carefully fold in the yoghurt and extract.
Step 2: Place the meringues in a freezer bag and bash with a rolling pin to break into uneven pebble-sized pieces. It’s nice to have a mixture of large pieces and smaller crumbs, for the best texture.
Step 3: Fold together the cream mixture, the meringues and the fruit. Cover and chill for at least 1 hour before serving.
